If you’re like many, you have a preconceived notion that lamb has a strong flavor. The truth of it is that if you have properly cooked lamb chop, you would change your mind. This Spiced Lamb on the grill will definitely change your mind!
Ingredients:
2 pounds thick cut lamb chops (about 1½” thick)
4 cloves minced garlic
1 tablespoon freshly chopped rosemary
1 1/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
zest of 1 lemon
1/4 cup virgin olive oil
Directions:
First we make the marinade by combining the garlic, rosemary, salt, pepper, lemon zest and the virgin olive oil in a measuring cup.
Evenly pour the marinade over the lamb chops, making sure to flip them over and cover both sides.
Cover the dish with foil or saran warp and marinate the chops in the fridge for a minimum of 1 hour and up to 24 hours. The longer they marinate–the tastier!
When you’re ready to grill, heat your grill to medium-high heat. You want to sear them on each side. Then grill the lamb chops for about 7-9 minutes until they reach about 135F or 60C, then remove them.
At that point, they’ll be cooked about medium, which is personally, how I like my lamb.
From experience, you don’t want well done lamb. There’s nothing worse than a dried out, over-cooked lamb chop. So make sure to keep a close eye on them.
Finally, place the cooked lamb chops on a plate covered with foil. Allow 5 minutes for them to rest before serving.
